- 1 pound beef shank
- 8 cups beef broth
- 2 cups fresh egg noodles
- 1 onion chopped
- 2 cloves garlic minced
- 1 cup carrots sliced
- 1 cup bok choy
- 1 tablespoon soy sauce
- 1 teaspoon ginger minced
- 2 green onions chopped
- Salt to taste
- Pepper to taste
- In a large pot, add beef shank and cover with beef broth. Bring to a boil and simmer for 1.5 hours until tender.
- Remove the beef, let it cool slightly, and then shred it.
- Add chopped onion, garlic, and carrots to the broth, cooking until softened.
- Stir in the soy sauce and ginger.
- Add the noodles and cook according to package instructions.
- In the last few minutes, add bok choy and shredded beef.
- Serve hot, garnished with green onions, salt, and pepper to taste.
