A hearty and flavorful beef noodle soup that warms the soul.

Ingredients

  • 1 pound beef shank
  • 8 cups beef broth
  • 1 tablespoon soy sauce
  • 3 cloves garlic, minced
  • 1 inch ginger, sliced
  • 3 green onions, chopped
  • 8 ounces rice noodles
  • 2 cups bok choy
  • 1 tablespoon sesame oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, bring the beef broth to a boil.
  2. Add beef shank, ginger, and garlic; simmer for about 1.5 hours until the beef is tender.
  3. Remove beef, shred it, and set aside.
  4. Stir in soy sauce and sesame oil to the broth.
  5. Cook rice noodles according to package instructions and add to the broth.
  6. Add bok choy and cook for an additional 5 minutes.
  7. Return shredded beef to the pot, and season with salt and pepper to taste.
  8. Garnish with green onions before serving.

Notes

  • For a spicier version, add chili paste to the broth.
  • Use fresh herbs like cilantro for additional flavor.
