- 1 pound beef shank
- 8 cups beef broth
- 1 tablespoon soy sauce
- 3 cloves garlic, minced
- 1 inch ginger, sliced
- 3 green onions, chopped
- 8 ounces rice noodles
- 2 cups bok choy
- 1 tablespoon sesame oil
- Salt to taste
- Pepper to taste
- In a large pot, bring the beef broth to a boil.
- Add beef shank, ginger, and garlic; simmer for about 1.5 hours until the beef is tender.
- Remove beef, shred it, and set aside.
- Stir in soy sauce and sesame oil to the broth.
- Cook rice noodles according to package instructions and add to the broth.
- Add bok choy and cook for an additional 5 minutes.
- Return shredded beef to the pot, and season with salt and pepper to taste.
- Garnish with green onions before serving.

- For a spicier version, add chili paste to the broth.
- Use fresh herbs like cilantro for additional flavor.
