Authentic Mexican birria tacos, filled with slow-cooked beef, spices, and served with a flavorful consommé for dipping.

Ingredients

  • 3 pounds beef chuck roast
  • 1 pound beef shank
  • 4 guajillo chiles
  • 2 ancho chiles
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon black pepper
  • 4 cups beef broth
  • corn tortillas, for serving
  • fresh cilantro, for garnish
  • lime wedges, for serving

Instructions

  1. Toast the dried chiles in a skillet over medium heat until fragrant, then remove stems and seeds.
  2. Add the chiles to a blender along with garlic, onion, spices, and beef broth; blend until smooth.
  3. In a large pot, sear the beef on all sides until browned.
  4. Pour the chile mixture over the beef and simmer for 2-3 hours until tender.
  5. Shred the beef and serve in corn tortillas along with broth, cilantro, and lime.

Notes

  • For extra flavor, you can marinate the beef in the chile sauce overnight.
  • Store leftovers in the broth to keep the meat moist.
  • Great for meal prep and freezing.
