Delicious birria tacos made with tender meat and aromatic spices, served with a side of consomé.

Ingredients

  • 2 pounds beef chuck roast
  • 1 pound bone-in beef short ribs
  • 4 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion, chopped
  • 4 garlic cloves
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 4 cups beef broth
  • 2 bay leaves
  • 12 corn tortillas
  • 1 cup chopped onions, for serving
  • 1 cup chopped cilantro, for serving
  • 1 lime, cut into wedges, for serving

Instructions

  1. In a large pot, heat some oil and brown the beef chuck roast and short ribs.
  2. Remove the meat and add the guajillo and ancho chilies, onion, and garlic; sauté until fragrant.
  3. Add the spices, beef broth, and bay leaves; return the meat to the pot.
  4. Simmer for 2-3 hours, or until the meat is tender.
  5. Remove the meat and shred it, then strain the liquid to make consomé.
  6. Dip the tortillas in the consomé to soften, fill with meat, and serve with onions, cilantro, and lime.

Notes

  • For spicy flavor, add fresh jalapeños to the filling.
  • This recipe can be made in a slow cooker for convenience.
