- 1 cup heavy cream
- 1 cinnamon stick
- 1 lemon peel
- 6 egg yolks
- 3/4 cup sugar
- 1/4 cup cornstarch
- 1/4 cup sugar (for caramelizing)
- In a saucepan, combine milk, heavy cream, cinnamon stick, and lemon peel; heat until just below boiling.
- In a bowl, whisk together egg yolks, sugar, and cornstarch until smooth.
- Gradually whisk in the hot milk mixture, then return to the saucepan.
- Cook over medium heat, stirring constantly until thickened.
- Remove from heat; strain mixture and cool.
- Pour into individual ramekins and refrigerate until set.
- Before serving, sprinkle sugar on top and caramelize with a torch.

- Allow the custard to chill completely for the best texture.
- Caramelizing the sugar just before serving enhances flavor and texture.
