Delicious enchiladas filled with seasoned ground beef and topped with savory sauce and cheese.

Ingredients

  • 500 g ground beef
  • 8 corn tortillas
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 tbsp olive oil
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic; sauté until softened.
  3. Add the ground beef and cook until browned, breaking it up as it cooks.
  4. Stir in half of the enchilada sauce and cook for a few more minutes.
  5. Fill each tortilla with the beef mixture, roll them up, and place in a baking dish seam side down.
  6. Pour the remaining enchilada sauce over the tortillas and sprinkle with cheese.
  7. Bake for 20 minutes or until the cheese is melted and bubbly.
  8. Serve warm.

Notes

  • For extra flavor, top with sour cream and chopped cilantro.
  • Can be made ahead of time and refrigerated before baking.
