- 500 g ground beef
- 8 corn tortillas
- 1 cup enchilada sauce
- 1 cup shredded cheese
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 tbsp olive oil
- 2 cloves garlic, minced
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic; sauté until softened.
- Add the ground beef and cook until browned, breaking it up as it cooks.
- Stir in half of the enchilada sauce and cook for a few more minutes.
- Fill each tortilla with the beef mixture, roll them up, and place in a baking dish seam side down.
- Pour the remaining enchilada sauce over the tortillas and sprinkle with cheese.
- Bake for 20 minutes or until the cheese is melted and bubbly.
- Serve warm.
Notes
- For extra flavor, top with sour cream and chopped cilantro.
- Can be made ahead of time and refrigerated before baking.
