Flämischer Fleischeintopf is a hearty Flemish meat stew that is perfect for cold weather.

Ingredients

  • 500 grams beef, cut into cubes
  • 300 grams pork, cut into cubes
  • 200 grams smoked sausage, sliced
  • 2 onions, chopped
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon bay leaves
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef and pork, browning all sides.
  3. Add the onions, carrots, and potatoes, sautéing for a few minutes.
  4. Stir in the tomato paste, thyme, bay leaves, and broth.
  5. Bring to a boil, then reduce to a simmer, cover, and cook for about 1.5 to 2 hours until the meat is tender.
  6. Add the smoked sausage in the last 30 minutes of cooking.
  7. Season with salt and pepper before serving.

Notes

  • This stew is even better the next day as the flavors meld together.
