A delicious and hearty breakfast burrito filled with eggs, cheese, and various toppings.

Ingredients

  • 4 large eggs
  • 1/2 cup shredded cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 2 large flour tortillas
  • 1/4 cup salsa
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Add diced onions and bell peppers, cooking until softened.
  3. In a bowl, beat the eggs and season with salt and pepper.
  4. Pour the eggs into the skillet, scrambling them with the vegetables.
  5. Once cooked, divide the mixture between the tortillas.
  6. Top with cheese and salsa, then roll up the tortillas into burritos.
  7. Serve warm.

Notes

  • Feel free to add other toppings like avocado or sour cream.
  • This recipe can easily be doubled for a larger batch.
