A traditional Galician empanada filled with tuna and vegetables, perfect for a quick meal or snack.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup cold water
  • 1/2 cup olive oil
  • 1 teaspoon salt
  • 1 onion, finely chopped
  • 1 bell pepper, finely chopped
  • 1 can tuna, drained
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a bowl, mix flour, water, olive oil, and salt until a dough forms. Knead for a few minutes.
  2. Roll the dough out into two circles. One for the base and one for the top.
  3. Sauté the onion and bell pepper until soft, then mix in the tuna.
  4. Place the tuna mixture on one dough circle, leaving edges clear.
  5. Cover with the second dough circle, sealing the edges well.
  6. Brush the top with the beaten egg.
  7. Bake at 375°F (190°C) for 30 minutes or until golden brown.

Notes

  • This empanada can be enjoyed warm or cold.
  • Feel free to add your favorite vegetables to the filling.
