- 2 pounds chicken thighs
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cans chipotle peppers in adobo sauce
- 1 cup chicken broth
- 1 teaspoon cumin
- 8 corn tortillas
- 1 cup crumbled queso fresco
- 1 avocado, sliced
- 1/2 cup cilantro, chopped
- In a large pot, cook the chicken thighs until golden brown.
- Add chopped onion and minced garlic, sauté until translucent.
- Blend chipotle peppers with adobo sauce and chicken broth, then pour over the chicken.
- Stir in cumin and simmer for 30 minutes.
- Shred the chicken and mix it with the sauce.
- Warm the tortillas and fill them with the chicken mixture.
- Top with queso fresco, avocado, and cilantro before serving.
