- 4 chicken breasts
- 200 g fresh spinach
- 100 g bacon, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 150 g cream cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil and sauté onion and garlic until soft.
- Add bacon and cook until crispy, then stir in spinach until wilted.
- Remove from heat and mix in cream cheese, salt, and pepper.
- Place chicken breasts on a flat surface and pound them slightly to flatten.
- Spread the spinach and bacon mixture onto each chicken breast.
- Fold the chicken over to create parcels and secure with toothpicks if needed.
- Place the chicken parcels in a baking dish and bake for 25-30 minutes.
- Serve warm with your favorite side.
