Delicious Iberian ham croquettes that are crispy on the outside and creamy on the inside.

- 200 grams Ibérico ham
- 50 grams butter
- 50 grams flour
- 500 ml milk
- 1 egg
- 250 grams breadcrumbs
- salt to taste
- pepper to taste
- oil for frying
- In a saucepan, melt the butter, then stir in the flour to make a roux.
- Slowly add the milk while stirring to avoid lumps.
- Once thickened, add chopped Ibérico ham and season with salt and pepper.
- Let the mixture cool, then shape it into small croquettes.
- Dip each croquette into beaten egg, then coat with breadcrumbs.
- Heat oil in a frying pan and fry the croquettes until golden brown.
- Drain on paper towels before serving.
Notes
- These croquettes can be made ahead of time and frozen before frying.
- Serve with a side of aioli for dipping.
