- 1 cup all-purpose flour
- 2 cups milk
- 3 large eggs
- 1/2 teaspoon salt
- 2 tablespoons butter, melted
- 200 grams grated cheese
- 1 tablespoon fresh herbs (optional)
- In a bowl, whisk together flour, milk, eggs, and salt until smooth.
- Heat a non-stick skillet over medium heat and add a little butter.
- Pour a ladle of batter into the skillet, tilting to spread evenly.
- Cook for about 2 minutes, until edges lift, then flip and cook for another minute.
- Repeat with the remaining batter, adding more butter as needed.
- When crêpes are done, sprinkle cheese on one half and fold over.
- Cook for an additional minute until the cheese is melted.
- Serve warm, optionally garnished with herbs.

- For a richer flavor, use a mix of cheeses.
- These crêpes can be frozen; just reheat in a skillet or the oven.
