Lebkuchen are delicious traditional German spiced cookies often enjoyed during the holiday season.

Ingredients

  • 2 cups honey
  • 1 cup brown sugar
  • 5 cups all-purpose flour
  • 1 tbsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp ground cloves
  • 1 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1 cup chopped nuts (almonds or hazelnuts)
  • 1 cup candied orange peel
  • 2 eggs
  • 1/4 cup lemon zest

Instructions

  1. In a large pot, heat the honey and brown sugar until dissolved.
  2. Remove from heat and let cool slightly.
  3. In a bowl, mix together flour, baking soda, and spices.
  4. Gradually add the dry ingredients to the honey mixture.
  5. Stir in the nuts, candied orange peel, eggs, and lemon zest until well combined.
  6. Cover the dough and refrigerate for at least one hour.
  7. Preheat your oven to 350°F (175°C).
  8. Roll out the dough on a floured surface and cut into desired shapes.
  9. Place on a baking sheet lined with parchment paper and bake for about 10-12 minutes.
  10. Let cool before icing if desired.

Notes

  • For added flavor, consider adding a tablespoon of vanilla extract to the dough.
  • These cookies can be stored in an airtight container for several weeks.
  • They are often enjoyed with a glaze of icing sugar mixed with lemon juice.
