- 2 pounds chambarete (beef chuck)
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 2 cups beef broth
- 8 corn tortillas
- 1 cup diced tomatoes
- 1 avocado, sliced
- 1 cup shredded lettuce
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, and sauté until soft.
- Add the chambarete, chili powder, cumin, and paprika. Cook until the meat is browned.
- Pour in the beef broth and bring to a boil.
- Reduce heat, cover, and simmer for 2 hours, or until the meat is tender.
- Shred the meat with two forks and mix it back into the sauce.
- Warm the corn tortillas and fill them with the beef mixture.
- Top with diced tomatoes, avocado, lettuce, sour cream, and cilantro before serving.
