- 1 kg lamb shoulder, cut into chunks
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 garlic cloves, minced
- 1 tablespoon tomato paste
- 500 ml beef stock
- 200 ml red wine
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt to taste
- Black pepper to taste
- Heat olive oil in a large pot over medium heat.
- Add lamb and brown on all sides.
- Remove lamb and add onion, carrots, and garlic, cooking until softened.
- Stir in tomato paste and cook for 1 minute.
- Add the lamb back to the pot along with the beef stock, red wine, thyme, and rosemary.
- Bring to a simmer, cover, and cook for 1.5 to 2 hours until the lamb is tender.
- Season with salt and pepper before serving.
Notes
- This dish can be made ahead of time and tastes even better the next day.
- Serve with crusty bread or mashed potatoes.
