- 1 cup lentils
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 teaspoon smoked paprika
- 1 tablespoon soy sauce
- 1 tablespoon flour
- 1 cup coconut milk
- salt and pepper to taste
- fresh parsley for garnish
- Rinse lentils and cook them in vegetable broth until tender, about 20 minutes.
- In a separate pan, heat olive oil and sauté onion and garlic until translucent.
- Add mushrooms and cook until softened.
- Stir in smoked paprika and soy sauce.
- Sprinkle flour over the mixture and stir to combine.
- Add cooked lentils and coconut milk, stirring until thickened.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
