- 250 g all-purpose flour
- 125 g unsalted butter
- 100 g sugar
- 1 egg
- 50 g ground almonds
- 1 tsp baking powder
- 1 tsp vanilla extract
- 200 g raspberry jam
- Preheat the oven to 180°C (350°F).
- In a bowl, mix flour, ground almonds, and baking powder.
- In another bowl, cream together butter and sugar until light and fluffy.
- Add the egg and vanilla extract to the creamed mixture and mix well.
- Gradually add the dry ingredients to the wet mixture and mix until combined.
- Chill the dough for at least 30 minutes.
- Roll out the dough and cut into shapes.
- Place half of the cookies on a baking sheet.
- Add raspberry jam to the center of each cookie on the baking sheet.
- Top with the remaining cookie shapes.
- Bake for 10-12 minutes until lightly golden.
- Let cool and dust with powdered sugar before serving.
