- 2 cups cooked macaroni
- 1 cup shredded cheese
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- 1 package empanada dough
- 1 egg (beaten, for egg wash)
- Preheat the oven to 375°F (190°C).
- In a bowl, mix cooked macaroni, cheese, bell peppers, onions, and garlic powder.
- Roll out the empanada dough and cut into circles.
- Place a spoonful of the macaroni mixture in the center of each circle.
- Fold the dough over to create a half-moon shape and seal the edges with a fork.
- Brush the top with beaten egg.
- Place the empanadas on a baking sheet and bake for 20-25 minutes until golden brown.
Notes
- For a spicy kick, add jalapenos to the filling.
- Serve with a side of marinara sauce for dipping.
