A refreshing and fruity salad perfect for brunch or a light meal.

Ingredients

  • 2 cups mixed greens
  • 1 cup mandarin orange segments
  • 1/2 cup pomegranate seeds
  • 1/4 cup sliced almonds
  • 1/4 cup feta cheese
  • 1/4 cup balsamic vinaigrette

Instructions

  1. In a large bowl, combine the mixed greens, mandarin oranges, pomegranate seeds, and sliced almonds.
  2. Add the feta cheese on top.
  3. Drizzle balsamic vinaigrette over the salad just before serving and toss gently.

Notes

  • This salad is best served fresh and can be prepared in advance but dress just before serving.
  • Feel free to substitute the nuts or cheese according to your preference.
