Delicate mini lemon tarts that are perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour and powdered sugar.
  3. Add softened butter and combine until crumbly.
  4. Press the mixture into tartlet pans.
  5. In another bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt.
  6. Pour the lemon mixture into the prepared crusts.
  7. Bake for 20-25 minutes or until set.
  8. Let cool before serving.
