- 1 cup all-purpose flour
- 1/3 cup powdered sugar
- 1/4 cup unsalted butter, softened
- 1 egg yolk
- 1 tablespoon lemon zest
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 2 eggs
- 1/2 cup fresh lemon juice
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour and powdered sugar. Cut in the butter until crumbly.
- Add egg yolk and lemon zest, mixing until dough forms.
- Press dough into mini tart pans and bake for 15-20 minutes until golden.
- In another bowl, whisk together heavy cream, granulated sugar, eggs, and lemon juice.
- Pour the lemon filling into the baked tart shells.
- Bake for an additional 15-20 minutes until set.
- Let cool before serving.
