Delicate mini lemon tarts with a creamy filling, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1 egg yolk
  • 1 tablespoon lemon zest
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/2 cup fresh lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and powdered sugar. Cut in the butter until crumbly.
  3. Add egg yolk and lemon zest, mixing until dough forms.
  4. Press dough into mini tart pans and bake for 15-20 minutes until golden.
  5. In another bowl, whisk together heavy cream, granulated sugar, eggs, and lemon juice.
  6. Pour the lemon filling into the baked tart shells.
  7. Bake for an additional 15-20 minutes until set.
  8. Let cool before serving.

  • These tarts can be refrigerated for up to 3 days.
