Delicate mini lemon tarts that are perfect for any occasion.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg yolk
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 cup heavy whipping cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour and powdered sugar.
  3. Add the softened butter and mix until crumbly.
  4. Stir in the egg yolk, lemon juice, and lemon zest until dough forms.
  5. Press the dough into mini tart pans and bake for 15 minutes.
  6. In another bowl, whip the cream with granulated sugar and vanilla until soft peaks form.
  7. Fill the cooled tart shells with whipped cream mixture and garnish with lemon zest.
  8. Chill for at least 1 hour before serving.

Notes

  • Make sure to fill the tart shells only when they are completely cooled.
  • Garnish with fresh berries for added flavor.
