- 200 grams digestive biscuits
- 100 grams butter, melted
- 500 grams cream cheese
- 200 grams powdered sugar
- 400 grams canned pineapple, drained and diced
- 400 ml heavy whipping cream
- 1 packet gelatin powder
- 50 ml pineapple juice
- Crush the digestive biscuits and mix with melted butter.
- Press the mixture into a tart pan to form the base.
- In a bowl, beat the cream cheese and powdered sugar until smooth.
- Fold in the diced pineapple.
- In another bowl, whip the heavy cream until soft peaks form and gently fold it into the cream cheese mixture.
- Dissolve the gelatin in pineapple juice and mix it into the filling.
- Pour the filling over the biscuit base and refrigerate until set, about 4 hours.
- Once set, slice and serve chilled.
Notes
- For a tropical twist, add shredded coconut to the filling.
- Ensure the cream cheese is at room temperature for easier blending.
