A refreshing salad made with nopales, a traditional Mexican cactus. This dish is nutritious and vibrant, perfect for a light meal or side.

Ingredients

  • 2 cups diced nopales
  • 1 medium tomato, diced
  • 1/2 medium onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, minced
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • Salt to taste

Instructions

  1. In a large bowl, combine diced nopales, tomato, onion, cilantro, and jalapeño.
  2. Drizzle with olive oil and lime juice, and mix well.
  3. Season with salt to taste.
  4. Let sit for 10 minutes to allow flavors to meld.
  5. Serve chilled or at room temperature.

Notes

  • For a spicier salad, add more jalapeño.
  • Can be served with tortilla chips for added crunch.
  • Best served fresh but can be refrigerated for up to a day.
