- 2 cups mixed greens
- 1 cup grated gouda cheese
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup olives, sliced
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon paprika
- Salt and pepper to taste
- In a large bowl, combine mixed greens, gouda cheese, red and yellow bell peppers, cherry tomatoes, red onion, and olives.
- In a small bowl, whisk together olive oil, balsamic vinegar, paprika, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately.
