- 1 pound penne pasta
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1 cup vodka
- 1 (15-ounce) can crushed tomatoes
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt to taste
- Black pepper to taste
- 2 tablespoons chopped fresh basil
- Cook the penne pasta according to the package instructions; drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the onion and sauté until translucent.
- Add the garlic and red pepper flakes, cooking for another minute.
- Pour in the vodka and let it reduce for about 5 minutes.
- Add the crushed tomatoes, stirring to combine. Let it simmer for 10 minutes.
- Reduce the heat and mix in the heavy cream and Parmesan cheese. Stir until smooth.
- Toss the cooked penne pasta with the sauce until well coated.
- Season with salt and black pepper to taste.
- Garnish with fresh basil before serving.
Notes
- For a spicier sauce, add more red pepper flakes.
- This dish pairs well with a simple side salad.
