- 250 g flour
- 125 g butter
- 100 g sugar
- 1 egg yolk
- 1 pinch of salt
- 1 tsp vanilla extract
- 300 g peach jam
- 100 g almond flour
- 1 tsp lemon peel, grated
- Preheat the oven to 180°C (350°F).
- In a bowl, mix flour, butter, sugar, egg yolk, salt, and vanilla extract until a dough forms.
- Add almond flour and lemon peel, mix well.
- Roll out the dough and cut out shapes.
- Place half of the cut-out cookies on a baking sheet, spread peach jam on top, and cover with the remaining cookies.
- Bake for 12-15 minutes until golden brown.
- Let cool and dust with powdered sugar before serving.
