Rinderrouladen are a traditional German dish made of thinly sliced beef rolled around a filling, often served with gravy and sides.

Ingredients

  • 4 large beef slices
  • 4 slices of bacon
  • 1 large onion, finely chopped
  • 2 carrots, finely chopped
  • 2 pickles, sliced
  • 2 tablespoons mustard
  • 500 ml beef broth
  • Salt to taste
  • Pepper to taste
  • 3 tablespoons cooking oil

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Flatten the beef slices using a meat mallet.
  3. Spread mustard over each slice and season with salt and pepper.
  4. Place a slice of bacon, some onions, carrots, and pickles on each slice.
  5. Roll them up tightly and secure with toothpicks.
  6. Heat oil in a pan and brown the roulades on all sides.
  7. Add beef broth to the pan and bring to a simmer.
  8. Transfer the pan to the oven and bake for about 1.5 hours.
  9. Remove roulades and let rest briefly before slicing.
  10. Serve with the sauce.

Notes

  • Rinderrouladen are often accompanied by red cabbage and dumplings.
  • Make sure to sear the roulades well for better flavor.
