Rote Menudo-Suppe is a traditional Mexican soup made with a flavorful blend of spices and ingredients, typically served during festive occasions.

Ingredients

  • 500 grams beef tripe
  • 200 grams pork feet
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large tomatoes, diced
  • 1 tablespoon vegetable oil
  • 2 liters water

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Stir in the diced tomatoes and cook until softened.
  4. Add the tripe, pork feet, water, bay leaves, oregano, chili powder, salt, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for 2-3 hours, or until the meat is tender.
  6. Remove bay leaves and serve hot.

Notes

  • This soup is often garnished with chopped cilantro and lime.
  • Adjust seasoning according to taste.
