A traditional German side dish made with red cabbage, perfect for holiday meals.

Ingredients

  • 1 medium head red cabbage
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 apples, peeled and diced
  • 1/4 cup apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves

Instructions

  1. Remove the outer leaves of the cabbage, then cut it into quarters and remove the core.
  2. Finely shred the cabbage using a knife or a mandoline.
  3. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  4. Add the shredded cabbage and diced apples to the pot, stirring well to combine.
  5. Pour in the apple cider vinegar, then add sugar, salt, cinnamon, and cloves.
  6. Cover and cook on low heat for about 45 minutes, stirring occasionally, until the cabbage is tender.
  7. Taste and adjust seasoning if needed before serving.

Notes

  • For a sweeter flavor, add more apples or a touch of honey.
  • Leftovers can be stored in the refrigerator for up to a week.
