Salmorejo is a traditional Spanish cold soup made from tomatoes, bread, olive oil, vinegar, and garlic. It is thicker than gazpacho and is typically served as a refreshing summertime dish.

Ingredients

  • 1 kg ripe tomatoes
  • 250 g stale white bread
  • 100 ml extra virgin olive oil
  • 30 ml white wine vinegar
  • 1 clove of garlic
  • 1 tsp salt
  • 2 hard-boiled eggs, for serving
  • 50 g jamón (Spanish ham), for serving

Instructions

  1. Begin by soaking the stale bread in water.
  2. In a blender, combine the ripe tomatoes, soaked bread, olive oil, vinegar, garlic, and salt.
  3. Blend until smooth and creamy.
  4. Chill the soup in the refrigerator for at least 2 hours before serving.
  5. Serve cold, garnished with chopped hard-boiled eggs and jamón.

Notes

  • For a creamier texture, use a high-quality blender.
  • Adjust the vinegar and garlic to taste for personal preference.
  • Can be made a day ahead for enhanced flavors.
