A delicious Basque cheesecake that is creamy and rich, featuring a burnt top.

Ingredients

  • 1 kg cream cheese
  • 300 g granulated sugar
  • 4 large eggs
  • 200 ml heavy cream
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 220°C (428°F).
  2. In a large bowl, beat the cream cheese and sugar until smooth.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the heavy cream, flour, and vanilla extract until combined.
  5. Pour the batter into a parchment-lined springform pan.
  6. Bake for 30–40 minutes, until the top is deeply browned.
  7. Allow to cool, then refrigerate for at least 4 hours before serving.

  • For the best texture, use room temperature cream cheese.
  • This cheesecake is traditionally served at room temperature.
