Schwarzwälder Kirschtorte, also known as Black Forest Cake, is a classic German dessert made with layers of chocolate sponge cake, whipped cream, and cherries.

Ingredients

  • 4 cups heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 teaspoon almond extract
  • 4 cups Morello cherries (canned or fresh)
  • 2 tablespoons Kirsch (cherry schnapps)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the dry ingredients (flour, sugar, cocoa powder, baking powder, baking soda, and salt).
  3. In another bowl, combine the wet ingredients (buttermilk, vegetable oil, almond extract, and eggs).
  4. Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
  5. Divide the batter into two greased and floured round cake pans.
  6. Bake for 30-35 minutes until a toothpick comes out clean.
  7. Let the cakes cool completely.
  8. Whip the cream with powdered sugar and vanilla extract until stiff peaks form.
  9. Once cooled, slice each cake in half horizontally.
  10. Place one layer on a serving plate, drizzle with cherry juice, and spread a layer of whipped cream and cherries on top.
  11. Add the next layer and repeat until all layers are assembled.
  12. Top with remaining whipped cream and decorations as desired.

Notes

  • For best results, chill the cake for a few hours before serving.
  • Garnish with chocolate shavings and whole cherries.
