- 1.5 kilograms pork shoulder
- 4 tablespoons Creole seasoning
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 cups chicken broth
- 1 lemon, juiced
- 2 bay leaves
- Preheat the oven to 165°C (325°F).
- In a bowl, mix the Creole seasoning, olive oil, and garlic to create the marinade.
- Rub the marinade all over the pork shoulder, ensuring it’s well coated.
- In a roasting pan, place the chopped onions and pour the chicken broth and lemon juice over them.
- Place the pork on top of the onions, add bay leaves, and cover with foil.
- Roast for 2-3 hours, removing the foil for the last 30 minutes to allow the skin to crisp up.
- Check the internal temperature; it should reach at least 70°C (160°F).
- Let the meat rest for 10-15 minutes before slicing and serving.
Notes
- Perfect to serve with roasted vegetables or mashed potatoes.
- Can be marinated overnight for deeper flavor.
