Delicious oven-roasted pork shoulder marinated in a spicy Creole mixture.

Ingredients

  • 1.5 kilograms pork shoulder
  • 4 tablespoons Creole seasoning
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 cups chicken broth
  • 1 lemon, juiced
  • 2 bay leaves

Instructions

  1. Preheat the oven to 165°C (325°F).
  2. In a bowl, mix the Creole seasoning, olive oil, and garlic to create the marinade.
  3. Rub the marinade all over the pork shoulder, ensuring it’s well coated.
  4. In a roasting pan, place the chopped onions and pour the chicken broth and lemon juice over them.
  5. Place the pork on top of the onions, add bay leaves, and cover with foil.
  6. Roast for 2-3 hours, removing the foil for the last 30 minutes to allow the skin to crisp up.
  7. Check the internal temperature; it should reach at least 70°C (160°F).
  8. Let the meat rest for 10-15 minutes before slicing and serving.

Notes

  • Perfect to serve with roasted vegetables or mashed potatoes.
  • Can be marinated overnight for deeper flavor.
