Delicious Schweinelende cooked in a rich Sherry wine sauce.

- 1 kg Schweinelende
- 250 ml Sherry wine
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Season the Schweinelende with salt, black pepper, thyme, and rosemary.
- Heat olive oil in a large frying pan and sear the Schweinelende on all sides until golden brown.
- Remove the meat and set aside. In the same pan, add onions and garlic and sauté until soft.
- Deglaze the pan with Sherry wine, scraping any browned bits.
- Return the Schweinelende to the pan, cover, and simmer for 1.5-2 hours until tender.
- Slice the meat and serve with the sauce.
Notes
- Serve with rice or potatoes for a complete meal.
- For added flavor, marinate the meat in Sherry for a few hours before cooking.
