- 2 kg pork shoulder
- 200 g chicharrón
- 2 limes, juiced
- 4 cloves garlic, minced
- 2 tsp cumin
- 2 tsp paprika
- 1 tsp salt
- 1 tsp pepper
- Preheat your oven to 180°C.
- Rub the pork shoulder with lime juice, garlic, cumin, paprika, salt, and pepper.
- Place the pork in a roasting pan and cover with foil.
- Roast for 2 hours, then remove the foil and add chicharrón on top.
- Increase oven temperature to 200°C and roast for an additional 30 minutes until crispy.
- Let it rest for 10 minutes before slicing.
Notes
- Serve with fresh lime wedges.
- Can be accompanied by rice or tortillas.
- For more flavor, marinate the pork overnight.
