A classic Italian pasta dish made with eggs, cheese, pancetta, and pepper.

Ingredients

  • 400 grams spaghetti
  • 150 grams pancetta or guanciale
  • 3 large eggs
  • 100 grams Pecorino Romano cheese
  • 1 clove garlic
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Boil a large pot of salted water and cook spaghetti until al dente.
  2. In a skillet, cook pancetta until crispy. Add garlic and sauté briefly, then remove garlic.
  3. In a bowl, whisk together eggs and grated Pecorino Romano.
  4. Drain pasta, reserving some pasta water. Combine pasta with pancetta and remove from heat.
  5. Quickly mix in egg mixture, adding reserved pasta water as needed to create a creamy sauce.
  6. Season with salt and freshly ground black pepper before serving.
