- 300 grams asparagus
- 200 grams smoked salmon
- 200 ml cream
- 4 gelatine leaves
- 1 lemon (juice and zest)
- salt to taste
- pepper to taste
- Cook the asparagus in boiling salted water until tender, then cool in ice water.
- Purée the cooled asparagus with cream, lemon juice, salt, and pepper.
- Soak the gelatine in cold water, then dissolve in a small amount of warm water.
- Fold the dissolved gelatine into the asparagus mixture.
- Chill the mixture until slightly set, then fold in chopped smoked salmon.
- Pour the mixture into serving molds and refrigerate until fully set.
- Unmold and serve with additional smoked salmon and lemon zest on top.
Notes
- Feel free to add herbs like dill for extra flavor.
- This dish can be prepared in advance and stored in the refrigerator.
