- 1 pound flank steak
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 4 large flour tortillas
- 2 cups shredded cheese (cheddar and Monterey Jack)
- 1 tablespoon olive oil
- 1/2 cup sour cream (for serving)
- 1/2 cup salsa (for serving)
- Season the flank steak with garlic powder, onion powder, smoked paprika, and cumin.
- Heat olive oil in a skillet over medium-high heat and cook the steak for 5-7 minutes on each side, or until desired doneness.
- Remove the steak from the skillet and let it rest before slicing thinly.
- In the same skillet, place one tortilla, layer with cheese and sliced steak, then top with another tortilla.
- Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve with sour cream and salsa.
Notes
- Feel free to add peppers or onions for extra flavor.
