Capirotada is a traditional Mexican bread pudding that is often enjoyed during Lent. It is a rich dessert made with layers of bread, syrup, cheese, and spices.

Ingredients

  • 6 cups cubed bolillo or French bread
  • 2 cups water
  • 1 cup brown sugar
  • 1 cup piloncillo (unrefined cane sugar)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 cup shredded cheese (e.g., queso blanco or cheddar)
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts or pecans

Instructions

  1. In a saucepan, combine water, brown sugar, piloncillo, cinnamon, and cloves. Bring to a boil, then let simmer for 10 minutes to make a syrup.
  2. In a greased baking dish, layer bread cubes, drizzle with syrup, and add cheese, raisins, and nuts.
  3. Continue layering until all ingredients are used, finishing with cheese on top.
  4. Bake in a preheated oven at 350°F (175°C) for about 30-40 minutes until golden and bubbly.
  5. Let cool slightly before serving.

Notes

  • For a richer flavor, consider adding a splash of rum or brandy to the syrup.
  • Traditionally served warm, but can also be enjoyed cold.
