6 cups cubed bolillo or French bread
2 cups water
1 cup brown sugar
1 cup piloncillo (unrefined cane sugar)
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 cup shredded cheese (e.g., queso blanco or cheddar)
1/2 cup raisins
1/2 cup chopped walnuts or pecans
Instructions
In a saucepan, combine water, brown sugar, piloncillo, cinnamon, and cloves. Bring to a boil, then let simmer for 10 minutes to make a syrup.
In a greased baking dish, layer bread cubes, drizzle with syrup, and add cheese, raisins, and nuts.
Continue layering until all ingredients are used, finishing with cheese on top.
Bake in a preheated oven at 350°F (175°C) for about 30-40 minutes until golden and bubbly.
Let cool slightly before serving.
Notes
For a richer flavor, consider adding a splash of rum or brandy to the syrup.
Traditionally served warm, but can also be enjoyed cold.
