A hearty and flavorful wild game stew perfect for colder days.

Ingredients

  • 2 pounds wild game meat, such as venison or elk
  • 1 tablespoon olive oil
  • 2 cups carrots, diced
  • 2 cups potatoes, diced
  • 1 cup onions, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onions and garlic; cook until soft.
  3. Add the wild game meat and brown on all sides.
  4. Stir in the carrots, potatoes, thyme, and rosemary.
  5. Pour in the beef broth and red wine; season with salt and pepper.
  6. Bring to a boil, then reduce heat and let simmer for 2 hours.
  7. Serve hot and enjoy.
