- 4 medium onions, chopped
- 500 grams potatoes, peeled and diced
- 1 liter vegetable broth
- 3 tablespoons olive oil
- Salt to taste
- Freshly ground black pepper to taste
- 2 bay leaves
- Optional: chopped chives for garnish
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onions and sauté until they are translucent.
- Add the diced potatoes and stir for a few minutes.
- Pour in the vegetable broth and add the bay leaves.
- Bring to a boil, then reduce the heat and let simmer for about 25-30 minutes or until the potatoes are tender.
- Remove the bay leaves, then purée the soup with an immersion blender until smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped chives if desired.
Notes
- For a richer flavor, you can caramelize the onions for longer before adding the potatoes.
- This soup can be stored in the refrigerator for up to 3 days.
