A comforting and flavorful onion soup that warms the soul.

Ingredients

  • 4 large onions, thinly sliced
  • 4 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 8 cups beef stock
  • 1 cup dry white wine
  • 1 teaspoon thyme
  • 1 tablespoon flour
  • 8 slices of baguette
  • 2 cups grated Gruyere cheese

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the sliced onions, salt, and sugar. Cook until the onions are caramelized, about 30 minutes.
  3. Stir in the flour and thyme; cook for an additional 2 minutes.
  4. Slowly add the beef stock and white wine, bringing to a simmer.
  5. Simmer for 20 minutes, adjusting seasoning as needed.
  6. Preheat the oven to 400°F (200°C).
  7. Place the baguette slices on a baking sheet and toast in the oven until crispy.
  8. Serve the soup in bowls topped with a slice of baguette and a generous sprinkle of Gruyere cheese.
  9. Broil until the cheese is bubbly and golden brown.

Notes

  • This soup can be made a day ahead and reheated.
  • Adjust the cheese quantity to taste.
  • For a vegetarian version, use vegetable stock instead of beef.
